Week 52: Baked Haddock

For my final recipe, I wanted something simple. I actually made this in the first week of January 2018, so I wanted to get my 2017 resolution finished. I remembered that the cod meal I made was very bland, so I wanted to try another fish. I know haddock is often used in fish and chips, so I decided to go for that.

Here is the recipe I used.

This recipe made two servings of haddock, so I doubled the amount of fish but kept the measurements for the coating ingredients the same. I have finally learned that recipes are way to liberal with coating measurements.

This was similar to the parmesan crusted salmon I made early in 2017. I wasn’t sure if the parmesan would be a good combination with the salmon, but it was. The same was true with this recipe, the parmesan and haddock were also a good combination. It was also much more flavorful than the cod.

We baked up some fried to go with it and we had a nice fish and chip dinner! It was very quick to make! I’ll probably be making this one again.
