Week 46: Onion Soup au Gratin

The one in our house who doesn’t like onions was away, so we got excited and went for onion soup! This another soup I’ve never tried, and I like onions, so I was looking forward to trying it out.

Again, I took this recipe from Clueless in the Kitchen by Evelyn Raab. Here is a similar recipe, but the one I used didn’t call for sherry or thyme.

This first thing we did with this recipe was cut the amount of veggie broth in half, so we wouldn’t be left with so many leftovers and get more oniony goodness. The sautéing the onions took quite a while, so if you want to make this, make sure you plan for at least half an hour of sautéing. Once the soup was ready, we added a slice of baguette to each serving and doused them with cheese.

This was a really delicious soup! The cheese that didn’t fit on the baguette slice was so nice with the onion. It was such a tasty and cozy recipe for the cold winter months. I’ll definitely be making this one again!
