This recipe is something simple and different. We’ve all had hash browns, but what about Zucchini Hash Browns?
For this recipe, I just needed to grate some zucchini, drain any excess water, add in the parmesan and spices, then cook it. Super simple! I did find that the zucchini was a bit messy when grated, but it wasn’t too bad.
The hash brown patties tasted good, but I found them too cheesy. The parmesan really overpowered the zucchini taste, so if I make these again, I’d make them with 1/3 or even 1/4 cup of parmesan.
