Continuing on the zucchini theme, I decided to make a birthday favourite this year: Chocolate Zucchini Cake! My mom used to make this for my birthday when I was a kid, and we haven’t made it for a while, so I thought it was time to bring it back!
If you don’t have a lot of experience with cakes, this cake seems to have a lot of ingredients, but that’s normal. It’s a pretty simple process to put together a cake batter.
We didn’t know what we would do with an entire cake (because there is only three of us) so I made them into cupcakes instead.
I wanted a really good creamy frosting for the cupcakes. I haven’t had much luck with frosting in the past, it either winds up too buttery or too sweet. But this frosting recipe was amazing! It was so creamy and fudgy, it was dangerous! Combined with the delicious and moist cupcakes, it was an amazing combination!
These cupcakes were so good! You wouldn’t even know there was zucchini in it, unless you were told. I think these have just been brought back as a birthday tradition!
