This weekend was Family Day, and I found this recipe I thought my Vegetarian (or Pescetarian if you want to get technical) parents would enjoy.
Like last week’s quiche, this is very simple and customizable. We used my crock pot and my mom’s Dutch oven since we went a bit overboard with the veggies. We made one vegetarian pot pie and one with chicken for my more carnivorous sister. For the vegetables, we used carrots, onions, Brussels sprouts, broccoli, mushrooms, and potatoes.

Overall, this was really tasty, my only suggestion would be to add more spices to it to get a bit more flavour. The recipe called for thyme, but we forgot to add it (and it didn’t help that it was never mentioned in the instructions) so that may have been a factor. Other than that, it was fairly simple and fun to make.
